GMAO uses xesmf quite a bit for regridding between curvilinear to regular or regular to regular grids. It allows saving weights and contains dask parallel implementation.
Cmocean is lightweight package. This would be quite useful for EVA, even though the name includes ocean it could be used for other model outputs as well. Plus they are beautiful:
