darwin_install_ollama uses https://api.github.com to retrive the latest version.
When running in CI that call fails (possibly needs a token?!).

To workaround that I pinned the ollama version.

Calling GH api lots of time (e.g. in CI) will hit a rate limit, so using a PAT token or some other approach would be best.
