We should look at 280North's Cappuccino (the same as Cocoa, but for the web: http://cappuccino.org/), as well, since they made Objective-J (which is like Objective-C, but in JavaScript). They had a big media impact when they released their Keynote-like web based presentation app, we should do something cool as well.
One of the all-time favorite of mine is obviously Apple's Cocoa (http://developer.apple.com/technologies/mac/cocoa.html). I think they use many great ideas. On the other hand, UIKit (Cocoa's iOS sibling, they also call it Cocoa Touch http://developer.apple.com/technologies/ios/cocoa-touch.html) is more modern, so (apart from the touchscreen orientedness) we may also get great ideas from there.
