APIRule v2 documentation

Description

Rework API Gateway APIRule documentation to showcase v2 version. v2 version should be main and default version used in API Gateway documentation. All examples / tutorials / mentions should use v2 version. v1beta1 should be moved to separate folder. v2alpha1 should stay in separate folder. Consider adding disclaimer mentioning when change will be effective on regular channel on managed offering.

ACs:

• v2 default version in documentation
• v1beta1 moved to dedicated folder
• v2alpha1 stays as is

Reasons

DoD:

• Provide documentation.
• Verify if the solution works for both open-source Kyma and SAP BTP, Kyma runtime.
