Tuning bed Mesh While Printing

I'm currently trying to tune in my bed as much as possible using manual bed mesh (Ender 3V2). I'm pretty close on this, but I want to make some small final adjustments while printing.

Other marlin firmware walkthroughs show going back to the bed mesh setting while printing to adjust things. Do the z offset settings on the tuning page have the same effect? If I make changes there will it retain from print to print?

Also, am i able to make those changes on the fly via octoprint? When I look at the control page while a print is happening, all the settings are grayed out. All the guides/videos online seem to be a few years old at this point and don't line up close enough.
