We should check that our Dockerfile works as expected with CPython codebase.

What sort of compatibility are we expecting? Would we use latest on main, but when we branch for betas we pin to the last container released?

FYI I opened https://discuss.python.org/t/what-kind-of-compatibility-do-we-expect-for-dev-containers/72366 to try and get some clarity around what sort of compatibility people might be expecting.
