German's Sweet Chocolate Cookies

Ingredients

  • 2 - 4 oz. packages Baker's German's Sweet Chocolate divided
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick soft butter (1/2 cup)
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1/8 cup water

Directions

Preheat oven to 375°. Chop 1 of the chocolate bars off; set it aside for later use. Break remaining chocolate bars in half; place in microwaveable bowl with the 1/8 cup of water. Microwave on high until almost melted. Stir until chocolate is completely melted; set aside. Mix flour, baking powder, and salt in medium bowl; set aside. Beat butter and sugar in large bowl with mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Blend in chocolate. Gradually add flour mixture, beating until well blended. Stir in chopped nuts and coconut. Drop heaping tablespoonfuls of dough, 2 inches apart onto ungreased baking sheet. Bake 10 minutes or until cookies are puffed and feel set to the touch. Cool on baking sheet for 10 minutes. Remove to wire racks, cool completely.
