Jupyter notebook demos up!

Adding jupyter notebook versions of the demonstrations in preprint.
Also available in the 2023 Webinar's repo with video demonstrations.

Update for older matplotlib versions.

Fixed an issue with older versions of matplotlib where the default line width could crash the plot's backend.

Tutorials and demos were fixed for folder export and minor error on "alpha" setting for continuous cases.
