fix: Update version to specific release tag

What

• Fix release tag for version update via run platform script
• Rename version update command
• Improve readability of script output
• Update docstring

Why

Users should be landing in stable release tags only by default.

How

• Checkout to tag instead which corresponds to input release version
• Checkout to latest tag automatically when no input release version or set as latest
• Checkout to latest main branch and force build from local when input release version set as main

Can this PR break any existing features. If yes, please list possible items. If no, please explain why. (PS: Admins do not merge the PR without this section filled)

• No, concerns only with deployment of the platform.
