This PR updates the Launchpad docs for v3. I have moved most of the old docs into the v2-deprecated directory so
that they can still be referenced.

For now, I am going to add all of the docs for v3 into the top level README. If there's a need we can break this up later. IMO, configuration has actually become easier in this release, so I opted not to construct all the different docker compose examples. We can always do this later if asked for it.

Important

I have not built Launchpad v3.0.0 yet however if you want, you can pull both v3.0.0rc2 from both our internal and external Docker registry. I want to wait for these docs to be merged into main

Note

If you navigate the launchpad-v3-docs branch, you can view the prose a bit easier without having to read the raw markdown.

Note

I intentionally left out docs for Voicebox here, we'll need to add those in an additional PR. I may need some additional help on those also. These can be deployed independently anyways.
